The municipality of Almudévar is located in the Hoya de Huesca region, halfway between the city of Huesca and the foothills of the Pyrenees. Its strategic location has historically made it a crossroads and meeting place, with a landscape dominated by agricultural plains dotted with small hills such as the Sierra de Gratal. This natural environment, marked by the transition between the Ebro Valley and the Pre-Pyrenees, creates a territory of great scenic and ecological richness.

The cheesemaking tradition in the municipality of Almudévar has historically been limited to fresh cheeses that were mainly made in its three hamlets: Artasona del Llano, San Jorge and Valsalada, where its inhabitants made cheese with the surplus from their milk cows.

Queso d'Estrabilla

En Valsalada, uno de los pueblos de colonización perteneciente a Almudévar, arrancaba en 2017 Queso d'Estrabilla con el ánimo de continuar con una tradición quesera condenada a la desaparición. Esta quesería elabora quesos de leche cruda y cortezas naturales, elaborados tanto con leche de cabra, como de oveja y vaca. Entre sus quesos podemos encontrar tanto pastas blandas, como quesos azules y quesos de corteza lavada.
